You’d think making blondies without any chocolate would be impossible, right? You’re wrong. After seeing Sarah Kieffers’ Instagram post about these I put them straight to the top of the list of bakes. These are gorgeous, gooey bites of naughtiness, full of coffee flavour and fudginess. I can’t wait to get my hands on her cookbook to try out more but for now, I’ll make do with her blog.
(you will need a lined and greased square brownie pan)
- 200g plain flour
- 1 1/2 tsp baking powder
- 175g butter
- 300g dark brown sugar
- 1/2 tsp salt
- 1 tbsp instant coffee, dissolved in 3 tbsp hot water
- 1 egg
- 1 tsp vanilla extract
- Melt the butter and sugar together in a saucepan over a low heat. Once melted, add the coffee and leave to cool slightly.
- Add the egg and vanilla and whisk till incorporated. Sift the flour, salt and baking powder and whisk until there are no lumps of flour and the mixture is smooth.
- Pour into the tin and bake for 20 minutes at 180oC. Leave to cool slightly before cutting into squares.
It’s as easy as that! Quick to make, quick to bake and even quicker to eat. I’ve since tried making these on two other occasions, adding both pecans and white chocolate chips.
