Pumpkin Spice Cupcakes


Purely decadent cupcakes featuring this months hottest flavour: pumpkin spice.


Pumpkin Spice Cupcakes

(you will need an electric hand whisk)


(for the cupcakes)

  • 120g butter, softened
  • 120g caster sugar
  • 2 eggs, beaten
  • 1 tsp baking powder
  • 1 tsp pumpkin spice
  • 150g self raising flour
  • 85g pumpkin puree

(for the icing)

  • 200g cream cheese
  • 50g butter
  • 200g icing sugar
  • 50ml baileys pumpkin spice
  • 1/2 tsp pumpkin spice
  1. For the cupcakes place all the ingredients in a large bowl and using an electric whisk, whisk until smooth and creamy.
  2. Scoop into muffin cases and bake at 180oC for 20 minutes. Leave to cool.
  3. For the icing, cream together the butter and icing sugar. Add in the cream cheese, baileys and pumpkin spice and blend until thick and creamy.
  4. Fit a piping bag with a plain nozzle and fill with the icing. Pipe swirls onto the cakes, starting from the outside working your way in.
