Almond, Peach and Star Anise Muffins

The flavour of peach takes me back to the East coast of America, in the not so deep south state of Georgia. A beautiful state, home to the gorgeous city of Savannah which I think I fell slightly in love with whilst visiting last year.

Spiced Peach and Almonds Muffins

(you will need a muffin pan and paper cases, makes 8 muffins)

Ingredients:

  • 60ml vegetable oil
  • 1 egg
  • 150ml full fat milk
  • 100g caster sugar
  • 200g self raising flour
  • 50g ground almonds
  • 1/2 jar peach conserve
  • 8 star anise
  • 1 tsp almond essence
  • 50g flaked almonds
  1. Start by heating the conserve up in a small saucepan with the star anise, over a low temperature heat till bubbling then take off the heat and leave to cool.
  2. For the muffins combine in one bowl the oil, milk, egg and almond essence. In another bowl combine the sugar, flour, ground almonds.
  3. Pour the liquid mix into the dry mix and stir to thoroughly combined. Fill up the muffin cases, but not as full as you normally would.
  4. Place a spoonful of the conserve on the muffin mx and sprinkle with some flaked almonds. Bake for 20 minutes at 180oC.
