One of lives simplest pleasures is a warm cookie straight from the oven but we don’t always have time to make them as they require cooling, and sometimes even days in the fridge to allow for flavours to develop.

So here we are with a cookie recipe that requires only store cupboard ingredients, what ever chocolate you have to had and less than 15 minutes later you’ll have yourself a plate of moreish cookies.

Simple Hazelnut & Chocolate Cookies

makes approx 20 cookies

Ingredients

  • 120g butter
  • 85g castor sugar
  • 60g soft brown sugar
  • 200g plain flour
  • 1/2 tsp baking powder
  • 1 egg
  • 1 tsp vanilla paste
  • 75g hazelnuts, roasted
  • 50g chocolate
  1. Begin by placing the butter in the microwave for 30 seconds until softened but not completely melted. Add both sugars and beat well till creamy.
  2. Beat egg and along with the vanilla, add to the mix. Sift in the flour and baking powder and mix till well combined. Finally stir in the hazelnuts till evenly distributed.
  3. Spoon dollops onto a baking tray lined with baking paper and press in a square of chocolate in each. Cook at 180oC for 8 minutes only! You don’t want to over cook cookies, eat them whilst still warm and you wont regret it.
